Culture & local life

“For ancient buildings above ground, look to Shanxi” — about 80% of China's surviving pre-Yuan timber structures are here, and Liang Sicheng's four Shanxi surveys in the 1930s rewrote architectural history. For travellers it is the only place to read the full sequence from Tang to Qing in person: Foguang's East Hall (Tang), the Yingxian Pagoda (Liao), Jinci's Sage Mother Hall (Song), Yongle Palace (Yuan) — a standing textbook.

The Shanxi merchants are the other thread: Ming–Qing bankers remitted silver nationwide from Pingyao's Rishengchang — the country grandfather of modern banking. Their courtyard compounds' brick, wood and stone carving turn wealth into architecture.

Shanxi's noodle universe exceeds imagination: knife-cut noodles are only the entrance — youming kaolaolao, mao'erduo, tijian, cagedou… “one flour, a hundred forms”. Aged vinegar is the default condiment; that pot on the table is no accident.

Shanxi is the Olympics of noodles: wheat, oat, bean and buckwheat flours rotate with millet porridge and aged vinegar as the base note.
