“After the Five Peaks, no mountain” — pines, rocks, clouds and hot springs; the yardstick of Chinese mountain aesthetics.
The “ox-shaped” village — Moon Pond and South Lake mirroring horse-head walls, the cover of Hui-style ink painting.
The boat-shaped village — a Ming–Qing folk museum, half as crowded as Hongcun.
The Kṣitigarbha bodhimanda — the 99 m statue and flesh-body halls of faith.
The mother river of Huizhou — cruise past cliff villages and loquat groves.
The seat of Huizhou prefecture — the Xu Guo archway and Yuliang dam, heart of Hui culture.
Huizhou culture overflows its borders: merchants “traded but revered learning” for three centuries, then brought wealth home as ancestral halls, archways, academies and the three carvings (wood, stone, brick). Look up inside Xidi's Jing'ai Hall or Hongcun's Chengzhi Hall — whole operas carved into a single beam.
Reclusion is the other register: Tao Xingzhi and Hu Shi both walked out of these villages. At dusk on the Yuliang dam, elders watch the water — time has viscosity here. In spring, rapeseed against horse-head walls is the photographers' annual rite.
Hui cuisine is heavy on oil, color and fire: the “stink” of chou gui yu is fermented freshness, hairy tofu's fuzz is time made visible. The “eight bowls, eight dishes” guest etiquette and ancestral rites still carry the warmth of lineage society.
Hui cuisine runs rich, dark and slow — fermentation is its signature, mountain and river produce its pantry.
