Jiangsu holds China's densest literary aura: 13 national historical-cultural cities (most of any province), 60-odd Suzhou zhuangyuan scholars, ten dynasties of capitals at Nanjing. History here lives in dailies — the soft Suzhou dialect, Huaiyang knife-work, gardens that unfold a scene per step.
Wu (southern Jiangsu) and Jianghuai (northern) cultures differ subtly: Suzhou refinement is lived (pingtan ballads, Biluochun tea, seasonal eating), Yangzhou refinement is indulgent (“skin of water in the morning, water of skin at night” — morning tea and bathhouses). Two kinds of slow, two days apart.
The Grand Canal runs the province's spine with Yangzhou at the origin. A short canal cruise past granaries-turned-creative-parks makes “canal is destiny” tangible — this water carried six centuries of imperial wealth.
China's most refined table: Huaiyang cuisine (state-banquet pedigree) and sweet Su classics, with Yangzhou morning tea as an institution.
