“The Yellow River enriches Ningxia”: two thousand years of Qin-Han canals turned this desert-ringed plain into a frontier Jiangnan. Small (7.3 million people) but dense — desert, river, Helan, Tangut history, Hui cuisine and top-tier wineries, all inside two hours' drive.
The Xixia is the mysterious chapter: the Tangut state ran 190 years, invented its own script (looks like Chinese, reads like nothing), and vanished under the Mongols into a “lost discipline.” Its rammed-earth pyramids kept silence below Helan until the 2025 World Heritage listing.
As a Hui autonomous region, the table runs on hand-eaten tan sheep (Yanchi is the benchmark — “herbs to eat, mineral water to drink; plain-boiled is the summit”), babbao tea and offal soup.
